Take out the duck liver slices and let it sit for an hour to release its unique taste. If you want to use our method: lightly scratch both sides of the duck liver slices in a criss-cross pattern, then season with salt. 2. Preheat the frying pan to "very hot" and bake for about 30 seconds on each side until you see a deep amber and caramel color. The inside of the foie gras should be medium rare and barely warm. If you want to cook frozen foie gras, brown the slices on both sides in a pan and bake in the oven for 15 minutes.
